Angelica Valdez said her loving goodbye on Sunday, May 26th 2019. Born July 3, 1984, the daughter of Lydia and Santiago Rojo. Angelica's battle with cancer has come to an end, she did not let cancer conquer her, she transcended it by the way she lived, by the way she loved, and she did not let cancer defeat her will to live. She was the dedicated wife and QUEEN of Raymond Valdez, they celebrated 10 years of marriage. Survived by five beautiful children, son Alex, daughter and expecting mother Danielle and granddaughter Ariel, son and wife Isaiah and Selina, daughter Rayven, and eight year old son Apollo. A beloved daughter, sister, and aunt to her unwavering family, parents Santiago and Lydia Rojo, brother and wife Rogelio and Marie Rojo and two children, sister and husband Erica and Shawn Plate and two children, sister Susana Rojo, and brother Thomas Rojo. A love for culinary arts began at a young age and she was pivotal in the opening of several restaurants in her 17 years in the culinary industry. This passion later drove her to become an inspiring chef and instructor/teacher at Institute of Technology. She was a renowned distributor of the best cakes on the planet. Angelica was dedicated in every sense of the word and it showed in all her generous acts. She was always the motivating factor in every situation to "get it done". She selflessly served the soldiers and their families in the Family Readiness Program, coordinating special events for our military. She loved the outdoors, gardening, camping, hiking, and was the driving spirit of all fun activities. She loved to entertain and host in her impressively clean home. The highlight of her life was anything that involved making memories with her family. Those of us that were honored by her love, presence, and strength have a person that gave all an example on how to live life. She showed us a fighting spirit that couldn't be matched. She showed us acceptance, love, grace, and dignity. Services for Angelica have been set and your attendance requested. St. Helen's Catholic Church 4870 E.
